Meal Plan Week Eight

It’s the countdown to Christmas! Less than 2 weeks till Christmas and our time is full of parties, concerts and all the regular stuff too. MONDAY - Butternut Squash Mac and Cheese. Super yummy, quick vegetarian meal and so much easier using canned squash when theres no time to roast your own.

WEDNESDAY - Sausage & Mushroom Naan Pizza. We love using naan for our pizzas at home. They freeze well and they are the perfect size for individual size pizzas. These flavors are a little more grown up, so if you need some basic pepperoni and pizza sauce please add those to your grocery list.

THURSDAY - Tuscan Garlic Tortellini Soup. Comfort food in a flash! Use a rotisserie chicken and tortellini from the deli section for some quick time saving options. No need to buy italian seasoning, you can sub in a ¼ teaspoon each of oregano, thyme, rosemary and basil instead.

FRIDAY - Fridge (our fancy word for leftovers).

SATURDAY - Supper Studio’s Rosemary Cream Pork Chops with Mushroom Rice

SUNDAY - Sheet Pan Chicken Fajitas with Spicy Rice . This recipe is a favourite at our house and super easy to double and freeze a meal for later. The rice can be mixed with its spices and frozen as well!

We’ve added the groceries for the extra meal on your list. Prep both meals at the same time to have a spare in your freezer for later!


Groceries: (Check your fridge and pantry for these items as you may already have them on hand!)

4 tbsp butter

2 cups whole milk

1 cup cream

2 cups shredded cheddar

2 cups goat cheese, crumbled

¼ cup parmesan

12 sage leaves

4 tbsp fresh parsley

14 garlic cloves

2 cups sliced cremini mushrooms

3 medium onion

2 cups spinach

6 bell peppers

4 cups diced butternut squash (2 cups mashed or canned)

1 cup tomato sauce

1 28oz can diced tomatoes

1 15 oz can white beans (navy, white kidney or great white will do)

1.5 cups veggie stock

4 cups chicken stock

4 cups pasta of your choice (i used shells)

2 cup brown rice

1lb chicken sausage (any flavor, italian works awesome)

Rotisserie chicken (you only need 2 cups, the rest can be used for lunch sandwiches)

1 ½ lb chicken breast

Package of cheese tortellini

Package of 6 naan bread

Pantry Items: (If you don’t have these, please add them to your grocery list!)
