Meal Plan Week Seven

It’s going to warm up this week! I’m so excited. Here’s the plan for this week. Simple enough to squeeze in all my Christmas decorating between kids activities and meal prep. BAM! Have such an awesome week!


MONDAY - Turkey and Quinoa Stuffed Peppers. Serve this with a salad. Make these extra special by making and stirring in refried beans made in the instant pot - Link to the recipe here.

TUESDAY - Green Thai Curry with Chicken & Pumpkin - I’m gonna be honest, this one is an experiment this week. But I hope it’s delicious! I was recently at a restaurant called “The Curry Bowl” in Fernie and I tried a similar dish to this and I was oddly hooked on the pumpkin in it so there’s the back story to wanting to try this! Also, whoever wrote this recipe wanted to sound really smart, but a “capsicum” is a pepper, a “courgette” is a zucchini.

THURSDAY - Taco Salad - Make it simple! In the grocery list I have prepared for nacho chips, taco beef, cheese, lettuce, tomato, lettuce, salsa, sour cream, avocado, and green onion. Adjust and add whatever else your family likes!

FRIDAY - Fridge (our fancy word for leftovers).

SATURDAY - Supper Studio’s Curried Cauliflower Soup. Vegetarian and so, so delicious!

SUNDAY - Shepherd’s Pie. You are going to make two here and freeze one (or give one away to a friend who could use some help!)


Groceries: (Check your fridge and pantry for these items as you may already have them on hand!)

  • 1.5 lbs chicken breasts, boneless and skinless

  • 4 lbs ground beef (freeze 3 lbs for the shepherd pie on Sunday)

  • 1 lb ground turkey

  • fresh garlic

  • 2 carrots

  • 2 white onions

  • 10 potatoes, russet or white

  • 6 coloured peppers

  • 2 cups kale

  • 2 cups broccoli

  • grape tomatoes

  • romaine lettuce (for taco salad)

  • 1 large zucchini

  • 2 avocado

  • bunch green onion

  • salad kit

  • 1 small pumpkin

  • 1 lime

  • 2.5 cups beef broth

  • 3 cups chicken broth - check your fridge for these from last week!

  • salsa

  • nacho chips

  • small jar green curry paste

  • 1 can coconut milk

  • 1 cup brown rice

  • small bag quinoa

  • 2 eggs

  • 1.5 cups milk

  • 2 cups shredded cheese (for taco salad)

  • small container sour cream

  • 1 cup frozen corn

  • 1 dozen fresh buns - freeze for Wednesday.

Pantry Items: (If you don’t have these, please add them to your grocery list!)

  • olive oil

  • minced garlic

  • red pepper flakes

  • Parmesan Cheese

  • salt and pepper

  • taco seasoning

  • brown sugar

  • 1/2 cup flour

  • thyme

  • savory (optional, but is in the shepherd’s pie recipe)

  • Worcestershire sauce
